（1）小磨香油用水代法生產，芝麻醬，此法主要是利用油料中非油成分對油和水的親和力差異，并利用油水比重不同而將油脂與其它物質分離。對人體健康不利的重金屬化合物因比重較大而沉淀醬渣中，從而避免了重金屬對人體的危害。

一般情況下為保留香油的香味，不會對這些浸出油再進行脫溶和精煉，但是這部分廠家也深知浸出工藝對于香油風味的負面影響，所以在上市時，采取了變通辦法：用小磨香油與機榨浸出的香油進行勾兌，用以減輕浸出油的危害，并以此提高機榨、浸出香油的風味，推向市場后就成了一般消費者難以區(qū)別的“小磨香油”，實際上是一種對消費者的欺騙行為，限于香油這一產品的特殊性，在食用時不經熟鍋，而是直接倒入菜中食用（即香油是一種生食油），這樣如摻入有溶劑殘留的浸出油，就會影響消費者的身體健康。

芝麻油根據香味特點分為兩類：一是香油，具有濃郁或顯著的芝麻油香味。芝麻中的有成分經高溫炒料工藝處理后，生成具有特殊香味的物質，致使芝麻油具有獨特的香味，有別于其他各種食用植物油，故稱香油。
